The Meats

The Cuts

We take pride in the fact that we only receive whole animals from small, local farms here at The Meat Hook. From farms to slaughterhouses we’ve visited them all and have chosen only the best local producers of the highest quality beef, lamb, pork and poultry. At the Meat Hook eating local doesn’t taste like a carbon footprint or leave you in the poor house.

While our meat is local, our curiosity extends to cuts around the world: if you’re looking for a specific muscle popular in Argentina, or a steak that goes for a pretty penny in Japan, we can accommodate you. Looking for a Secreto? We’ve got that. A spider steak? Yeah, we have that too. Don’t worry! If you don’t know how to cook a Campanella we can tell you how to do that too!

While we’re ultimately here to sell you pork chops we can also help you better understand why buying sustainably raised meat is important. Why is grass-fed beef a good thing? Why is pastured pork better for the environment than pigs raised in a CAFO? Free-Range? Cage-Free? Certified Humane? What the Hell? You have questions. We have answers.

OUR BEEF–Our beef is in an Empire state of mind. 100% of our beef is born, bred and raised on small NY state farms. The crown jewel of our beef program is Lee Ranney’s Kinderhook Farm in Ghent, NY. If there’s better grass-finished beef in the Northeast we haven’t tasted it! While we’re all fans of grass-fed meat, we don’t aim to make our tastes your tastes. With this in mind we also bring in a side of grass-fed/grain-finished beef every week that is fed grain that is grown a few miles from the farm.

Our cuts range from $6.99* for ground beef all the way up to $32.99 for dry-aged tenderloin. Most cuts can be found somewhere in between, with pieces like skirt and flank at $15.99 and Flat Iron and Delmonico at $17.99. You can also find cheaper steaks like Bistro steaks and London Broil for $12.99 and Dry-Aged Sirloin, Ribeye and NY Strip between $17.99 and $22.

OUR PORK–Whether you’re looking for pork loin, chops, ham, or shoulder we have it. Want a pig head? We have that too. Our Pigs are 100% NY State and, occasionally, all NYC: Raven & Boar and Sir William Berkshire in Dutchess County, and the Queens County Farm Museum–the only farm in the five boroughs raising pigs.

Our ground pork starts at $7.99. From there we have shoulders, hams and Secreto (the famed Spanish specialty cut) at $7.99, belly for $8.99, center cut pork chops for $11.99, and tenderloins for $14.99. If there is something else you’re looking for, just give us a call or stop by and we’ll make sure you get it.

OUR LAMB–Our lamb is pasture raised on small family farms in upstate New York.  Unlike most shops our “lambs” are actually Yearlings and Hoggets which are larger, meatier and more full-flavored than your typical lamb. If you’ve never had hogget you NEED to.

We offer lamb cuts from head to hindshank. Get a leg cut how you like it, shoulder, neck (which is amazing for braising and stewing), Frenched racks, belly roasts, and loin chops.

Prices range from $11.99 for neck, shank and belly up to $32.99 for Frenched racks.

Price and availability are subject to change, as lamb and mutton are seasonal. Call ahead to reserve your order.
