–“Visionary”. Eldest of the trio, Tom is the spiritual leader/big brother of the group. Tom can always be found with a book in his hand, increasing his own understanding of butchery so he can pass that knowledge along to his customers. When he doesn’t have a book in his hand, you’ll probably find a whiskey there. His knowledge of the Nevada, California and New York Judicial Systems is also surprisingly rich.
Tom trained with Josh Applestone at Fleisher’s in Kingston, NY. Since then he has opened the boutique butcher shop Marlow & Daughters and now The Meat Hook. He also currently writes for the Atlantic Food Channel.
